Orecchiette

Orecchiette is the pasta from Apulia par excellence, and its name comes from its characteristic shape resembling small ears.
It is produced exclusively from Senatore Cappelli durum wheat semolina, which results in a low starch content while maintaining an appropriate degree of expansion and high digestibility. Its typical concave shape allows for better retention of all types of sauces.
