Durum wheat semolina pasta made from 100% Italian wheat. Processed using traditional methods and extruded through bronze dies. Low temperatures (below 45 degrees Celsius) and a long drying time (up to 60 hours) create a very porous and rough pasta. This makes it ideal for sauce-based recipes.
