Arborio rice

This rice is suitable for risotto, dry rice dishes, and timbales. The grain is large, pearly, and absorbs a lot of water during cooking, significantly increasing its weight. A unique characteristic of this type of rice is its cooking process: the grain cooks evenly on the outside, but tends to retain an al dente core.
